Cajun Mushrooms 10-inch Dutch Oven 7 Coals on Bottom 10 Coals on Top 325 Degrees 2 cloves of garlic, minced 1 teaspoon oregano 1 medium onion, diced1/4 cup red wine 1 medium green bell pepper, diced 1 jalapeno pepper, chopped 1 medium tomato, diced1.2 pound whole button mushrooms 1 tablespoon tomato paste Simmer the garlic, oregano, and onion in the wine for 5 minutes. Add bell pepper and jalapeno pepper. Cook, stirring frequently, then add tomatoes and simmer for 30 minutes. Add mushrooms and tomato paste, cook until the sauce is thickened, about 10–15 minutes.

A good recipe book providing recipes using old fashioned Dutch or French ovens, cooking with coals, which could be adjusted to rough campfire type cooking with charcoal or wood, or eliminating that rustic cooking method to propane or gas, or even electric. A great rudimentary recipe book to have in a extended camping situation or facing another extended time of a storm bringing down the power grid in your area. I will use it to provide basic recipes which will be amended to what ever cooking method--coal, charcoal, wood, propane, gas, or electric I choose to use.

I've only tried a couple of the recipes so far, but having cooked with Bill and tasted the food he makes, I know what a great cook he is and what excellent dishes he prepares! I purchased 2 cookbooks, one for myself and one as a gift. My husband and I enjoy Dutch oven cooking AND Cajun foods, so this was a perfect addition to our cookbook collection. The 2nd book was purchased for someone who is not a Dutch oven cook, but as stated by other reviewers, Bill tells how to prepare the recipes in the kitchen, as well as outside over the coals. I look forward to trying all (or at least most) of Bill's recipes!

I don't generally endorse anything, but this is a good cookbook and I recommend it to all of you! I've known Bill for over 25 years and so far his food hasn't killed me,lol! I've had several of the dishes in this book and they are great. You've got to try the Blueberry Sausage Breakfast on page 27, it's the best thing for a one pot breakfast. I don't own a Dutch oven, so I use a Paula Dean chicken fryer with a lid instead. PS: It's also sold by Amazon.

For me, there were not too many useful recipes. Also, there were not many recipes in the book. I have not made anything using this book yet.

Bill, a friend of mine, spells out in a simple manner the art of Dutch oven cooking. His recipes cover a pleasant range from simple to somewhat complex and all are delicious.

The author, Bill Ryan, hit a home run with this Cajun, Dutch oven cook book. Easy to follow recipes and wonderful results. Lots of Dutch oven cookin' hints too. Best appreciated by someone that has some Dutch oven experience.

Nice and simple book with simple recipes but a bit on the small size. I will be trying s few of the recipes in it.
